This salad ticked a lot of boxes for me and my husband. We love chickpeas in salads or pureed in hummus. Dorie’s spin on this chickpea salad was a winner with us. This was a light dinner served with arugula and pita.

There really hasn’t been a chocolate chip cookie that I haven’t liked and this one from Everyday Dorie is no different. I refrigerated my dough to keep them soft and chewy and prevent spreading. I loved these for all the chocolate and I did hand cut nearly 12 ounces of chocolate for this recipe. A keeper for my husband and I but my son preferred not to have oatmeal in his cookies.
Loved both of these recipes! The salad dressing was perfect!

What a nice meal that made…and dessert too! We are not huge chickpea fans but that dressing certainly can be used with something else…that was delicious.

Love how you presented that salad- gorgeous and looks delicious (which I know it was !). Funny that your son opted out of the oatmeal part of that cookie as my son announced them his favorite ever type of chocolate chip and new #1 requested cookie lol !

I was searching for ways to make this salad more substantial for a light dinner. You provide the answer: arugula and pita. A perfect combination with the chickpea salad.
