Citrus-Currant Sunshine Muffins

I dusted off my copy of Baking From My Home to Yours by Dorie Greenspan and searched for some recipes I had yet to make. This muffin recipe caught my eye as one I wanted to bake. I checked the reviews by Steph, she liked them, and decided to make these as my recipe of the week for Tuesdays with Dorie.

With the addition of the zest of one orange, orange juice and lemon juice these packed a punch of citrus flavor. I splurged on currants for this recipe, I usually substitute for raisins, and was glad I did. I told my family before they could comment that these were supposed to be flat-topped. My husband and I love them. My son who drinks orange juice every day for breakfast did not like them, go figure with kids.
