Crackle-Top Cream Puffs

My fantastic husband was the baker this week, a migraine headache derailed my baking day. I had made the crackle top and it was ready in the freezer. My husband successfully made the cream puffs and he was pretty proud of himself. He made a pastry cream filling, not Dorie’s, which was mostly successful. I did not get to try it but he said it was a little grainy from the sugar and too sweet. I am not sure why he didn’t make Dorie’s version but I was not in a position to argue. Luckily he only took a dozen to the get together so I will be able to try the ones we have saved in the freezer. I will make Dorie’s pastry filling as I know it is good.

    Sorry to hear about your migraine – I hope you feel better now. What a fabulous hubby you have to step in and bake. I made a chocolate pastry cream filling for mine, and my puffs were clearly bigger than they should have been as I only got 12.
