Out of the three desserts I have made this month for Tuesdays with Dorie this was by far my favorite. I did not grow up eating sweet potato pie so this was my first taste and I loved it.
The base which is a little like Dorie’s sweet tart dough baked up easy. The filling, which seemed like a lot, spilled over the dough and I feared I had ruined my dessert but when it came out of the oven it looked fine. I had trouble getting my pie bars to set-up. I probably baked it over 15 minutes past Dorie’s suggestion of 30 minutes. The edges of my dessert look a little over baked but tasted fine. I went with Dorie’s suggestion of topping with marshmallows and I think that was a hit with my friendsgiving crowd. Not a crumb was left for this dessert. I can’t wait to make this one again and add it to my holiday menu.

Yes, this one was amazing. I refrigerated mine overnight and it helped the custard to set up, but found by day two they had started to get a little soggy.
