Tourte is French for pie. This was a lovely peach pie with Dorie’s magical sweet tart dough. The partially baked bottom tart was filled with summer’s sweet peaches covered in brown butter. With the addition of a little sugar, a little flour, a dash of vanilla and a squirt of lemon; the whole pie is then covered with more sweet tart dough sprinkled with sugar. After 50 minutes of baking this gorgeous tourte emerged from the oven. My husband proclaimed that it looked just like the picture. I thought it was perfect but my husband wanted more peaches. To each his own.
