This is the second tartine that I have made from Around My French Table. You don’t have to be on a diet to enjoy it. This was a light summer lunch for my husband and I. The bountiful summer tomatoes and cucumbers made it an ideal meal not to mention that it is super easy to make. Dorie recommends in her recipe to peel the cucumber and tomatoes but I did not bother. Sourdough bread is grilled, topped with lowfat cottage cheese, a little salt and pepper, then topped with the tomatoes, cucumbers and a little chives. Viola you have a lunch.
