Lavender Galettes

These are the first galette cookies I have made but the second cookie made with olive oil. These crispy cookies are a snap to make. Rub sugar, orange zest and lavender flowers together. Add the flour, baking powder and salt. Mix in the olive oil and vanilla. Finally knead in the water to form a dough. It was easy to roll between two sheets of parchment paper. Cutting the squares was tedious. I was not able to fit 8 cookies per pan only 6 but it worked out since I was making half a recipe.

The results, a tasty crispy cookie. I was worried about the lavender flavor but it is very subtle. I served these for my book club and they all disappeared. I think they were a hit.
