French Fridays Coconut-Lemongrass-Braised Pork

I recently had some extra coconut milk leftover and I remembered that Around My French Table had at least one recipe with coconut milk. I decided on this Coconut-Lemongrass-Braised Pork. I substituted pork chops for pork butt since I was making half a recipe. I served this with the optional ingredients of carrots, potatoes and onions. I also served it over egg noodles as suggested.

We really liked the flavor of this dish. The sauce is thin and I am not sure I would add the water next time. Overall all we liked the dish and would make it again.

    So nice to see you're still working your way through the book, Diane. Of course, this was a miss with my picky family, but I think trying all of Dorie's recipes and techniques made me a much better cook and expanded my culinary palate.
