Another hit recipe from the Food Network. I took these Pina Colada Cupcakes to a dinner party we were invited to and they were a success with adults and kids. The cake part is flavored with coconut milk, coconut oil, rum and lime juice. I chose to omit the coconut extract since I did not have any. My tasters thought there was plenty coconut flavor.
Again, the frosting is the star of this cupcake. One cup of pineapple juice is reduced down to 2-3 tablespoons which is like a syrup and it is added to the normal frosting ingredients of butter and powdered sugar. I added the rum to the frosting but omitted the coconut extract. The cupcakes are decorated with sweetened shredded coconut, I chose to leave some without, and maraschino cherries.
All cupcakes were eaten which is always a good sign. They got rave reviews and I would make them again. You can get the recipe at the Food Network.
