Limoncello Cupcakes

I have recently been on vacation so I am familiarizing myself with the inter-workings of a kitchen again.  I found my assignment for the week, Limoncello Cupcakes (page 194) in Baking Chez Moi.

When my son got home from school and wanted to know why the cupcakes were on a fancy dish. He said “Is book club coming over tonight?”  Nope just Tuesdays with Dorie I said.  These were more muffin- like than cake.  The fact that I baked them a tad too long didn’t help either.  I loved the frosting and thought it was the best part.  I did put in the optional orange marmalade but it sunk to the bottom. The paper liners stayed wet from the syrup application but the foil ones worked just fine.  My husband ate two for dessert so I think it gets a thumbs up.  I will bake less, stir less and hope for a lighter cake next time.  And maybe make them for my book club.

    These look great on the plate. I think I actually liked that they were a little muffin-like, I probably could have eaten this with just powdered sugar on top but the frosting is so pretty.

  3. Hmm I found these much more like cake than muffins. I do think the batter requires a delicate touch – or maybe you needed a little more syrup? Did you put it on right as they came out of the oven – I was worried it would soak the liners through but it soaked right into the cake as I brushed it on. In any case, these are worth trying again if you like lemon!

    They look very pretty – glad they were a hit with your husband. Mine baked in less time than the recipe says, about 18 minutes.

  7. Your forsting looks good. These cupcaks have had such good reviews that I will make them again with just lemon juice since I´m our of Limoncello

    I think your cupcakes look great! I love soft serve ice cream, or used to (don't eat sugar anymore) 😦 and your frosting reminded me of an ice cream cone. I think mine baked a little long, too, but everyone loved them, so that's good.
