Fall Harvest Cake

Fall Harvest Cake page 169.

This week’s recipe comes from Dorie’s newest cookbook Dorie’s Anytime Cakes. Her chapters are very cute and this one comes from Cakes with Corners. After reading the ingredients, I knew my husband would love it as it included some of his favorites.

Don’t let this ‘cake with corners’ fool you, it is quite complex. Lemon zest is rubbed into sugar. It includes both all-purpose flour and almond flour. The fruits include apple, raisins, and grapes. Other ingredients include eggs, whole-milk Greek yogurt, olive oil, vanilla and almond extract.

Presentation. The cake was topped with the sliced apples and grapes but my fruit sunk below the surface. I used the optional orange marmalade glaze which made it look gorgeous. And the nuts were a nice touch. I think next time I would cut the grapes in half or use those cute champagne grapes that Trader Joe’s carries.

I served this for my Friendsgiving and it was a big hit, praise all around. To see what others thought head over to Tuesdays with Dorie.
