Herb-Butter Chicken

After a two week vacation apparently I have forgotten how to blog. My husband had cut up the whole chicken before we remembered to take a picture. Actually I had made three of the four recipes for this month in one meal which I think was one too many for my brain.

On to the recipe at hand. This herb-buttered chicken comes from Everyday Dorie. I had made notes in my book to make half the recipe of herb butter since Dorie has you freeze half anyway. I used parsley, thyme and chives as that is what I had on hand. I forgot to save the stems as Dorie instructs. My bird was stuffed with green parts of the scallions and the lemon. I had a three pound chicken so mine cooked under an hour. Despite all the herbs, this bird did not have much flavor, I don’t think I salted it enough. I made the savory bread pudding to go with this meal so we did not eat the onions or chicken fat soaked bread. We don’t make whole roasted chickens often so I don’t think this one will go on the repeat.

  4. Good job on getting back and catching up but that is tough all in one meal! We don’t roast whole chickens either unless it is a blog recipe haha. This one was a surprise though…didn’t look that great but tasted delicious. I was like you and only made half the butter hahaha

  5. I have been on vacation too, hence the delay in writing the oomments. It must be the ingredients I put in the butter, they really flavor the chicken well. I was looking for a three-pound chicken too, but without much luck. The lone chicken thigh sounds so yummy!
