I was fortunate enough that my mother-in-law brought over a bag of oranges before I needed to make these Leckerli. Making candied orange peels was a bit of a process but not hard to do, I made 2/3 of a recipe and still had some leftover.
This is a plan-ahead cookie, it needs to sit for 24 hours at room temperature or 2 days in the refrigerator, I did the 24 hour method. This is a strange cookie dough as it does not have eggs or butter. Since I was making these about 10 o’clock at night I just rolled it into a circle. It baked up nicely in a 400 degree oven for 13 minutes. Out of the oven it did smell like a spice cookie; cinnamon, nutmeg and cloves are in the mix. This tasted a little like a fruit cake, we tasted more spice than orange. The recipe made quite a bit so I am sharing them with my co-workers.
