Leckerli

I was fortunate enough that my mother-in-law brought over a bag of oranges before I needed to make these Leckerli. Making candied orange peels was a bit of a process but not hard to do, I made 2/3 of a recipe and still had some leftover.

This is a plan-ahead cookie, it needs to sit for 24 hours at room temperature or 2 days in the refrigerator, I did the 24 hour method. This is a strange cookie dough as it does not have eggs or butter. Since I was making these about 10 o’clock at night I just rolled it into a circle. It baked up nicely in a 400 degree oven for 13 minutes. Out of the oven it did smell like a spice cookie; cinnamon, nutmeg and cloves are in the mix. This tasted a little like a fruit cake, we tasted more spice than orange. The recipe made quite a bit so I am sharing them with my co-workers.     I still haven’t made this one because the whole orange peel thing and two days has me stymied. Maybe by the next rewind I’ll have it down. You certainly make it sound easy and it looks delicious from your photo. Very inspiring.
