Natasha’s Mum’s Fruit and Walnut Bread Bars

When I opened the cook book to make these, I knew I was going to have to make substitutions. My husband does not like walnuts so that was first to go, I substituted for pecans. Next was the dried fruit. I did not have most of the fruit listed so I went with what I had, I called this cleaning out the cupboard cooking. What I threw in was crystallized ginger, dates, cranberries and raisins. It was going to be an experiment if all these flavors went together.

Nothing about these are bread like, they are chewy and I get the pop from the ginger. I rather like the color of the red cranberries, it brightens them up. Dorie did say ‘play around’ which is what I did and it worked. All the dried fruit and nuts went together and they were a nice treat. To see what others thought head over to Tuesdays with Dorie.

  2. Glad your family enjoyed these! Definitely a clean your cupboard type recipe!! I think although we all love fruit and nuts…cooked in a bar, they are not our favorite. Oh well haha.

These were good! I don’t think you can go wrong with whatever fruit and nuts you use.
