
This soup was a hit with the crowd and I liked it more than I thought I would. The soup requires a lot of ingredients and a bit of chopping but it was well worth the work. For the optional add-ins I included canned red beans, Greek yogurt, avocado, onion, red bell pepper, cheddar cheese, lime and tortilla chips. Oh, so many ingredients but that is what made it taste so good. My son is not much of a soup fan but he ate this chunky one with the chips and scooped the ingredients out; what ever works and at least he ate it. Seriously – this soup was fabulous ! I think it is now one of my favorite recipes from the book, which I saying something. So glad you made it and it was a hit.
