So-Good Miso Corn

This week on Cook the Book Fridays we are cooking with summer corn. I actually had all the ingredients for this one: miso, olive oil, butter, za’atar, salt, pepper and fresh basil. This one did not do it for us. Surprisingly, we didn’t taste much of the miso or za’atar and I even doubled the amount. Oh well you can win them all. To see what others thought head over to Cook the Book Fridays.

  1. I skipped the za’atar. Added squid, greens and herbs to make a salad. The dish comes together nicely. See that you use white corn, my favorite!

  2. Yeah this felt muddled to me as well!

  3. i liked this one, but i think i’d like to ramp up the Japanese flavorings a bit more and use a Japanese spice mix instead of cayenne and za’atar next time.

I am making this for our next post (also, the sundae) and will use everyone’s suggestions. Per Shirley’s post, I even bought Squid at Whole Foods yesterday. We’ll see. Not everything can be to your or my or anyone’s taste. We’ve done well as we’ve worked through this book, don’t you think? I learned a lot about spices in this post. Pretty photo. Am thinking about my California friends as these fires rage. Still remembering when Susan, Katie and I met you for lunch. I bet that little boy has grown up to be a big boy by now! I hope all is well for you and your family. My kids who live in Bishop have so much smoke but they are keeping the fires at bay. Stay safe.
