As I was researching pink peppercorns, I came across this bit of information, “As they are members of the cashew family, they may cause allergic reactions including anaphylaxis for person with a tree nut allergy”. Since my son has a nut allergy I decided to forgo adding the pink peppercorns instead of making yet another recipe my son could not eat.
This recipe was a home run in our family even without the pink peppercorns. I did not taste the white chocolate but it obviously added something special as the cookies were great. I took the easy route with the jam and just put it on the cookie, eliminating the boil/water stage. To see what others thought head over to Tuesdays with Dorie.

To be honest, I couldn’t taste the pink peppercorns and found it annoying to have to sift through the sugar to get rid of the husks (?) so I thin you made a good choice!
