Meringue Snowballs

Our next baking assignment comes from Dorie’s Cookies, the perfect dessert for the new year as they are as light as air. Made with few ingredients but takes planning ahead and some extended baking time. The egg whites need to come to room temperature before whipping. Granulated sugar, confectioner’s sugar and cream of tartar are added. The mixture is whipped until stiff and shiny. Making the mounds was probably the most difficult part, a sticky affair. The clouds are baked for one hour and fifteen minutes then the oven is turned off and they sit for an additional two hours. I left my meringues in the turned off oven over night. Dorie gives several additions that can be added for flavor. I had intended on making the vanilla snowballs but I forgot to add, but no matter they still tasted delicious.
