The Parmesan galettes are part of Dorie’s Cookies cocktail cookies section. There are just three ingredients to these galettes; flour, butter and Parmesan cheese, lots of Parmesan cheese. The dough made in a food processor and chilled for 1-2 hours comes together easily. I made my galettes free form as I had no patience for making them in a muffin tin. I also wanted to be able to slice and bake as needed since they are best the day made. My husband thought they would go nice with a bottle of wine. If we actually had a cocktail party to host or go to these would be a good accompaniment. To see what others thought head over to Tuesdays with Dorie.
These are definitely great with a glass of wine. I sliced and baked and placed them in muffin tins to keep them round but looks like I didn’t need to – yours are perfect!

LOL – just like you, I could not be bothered faffing with a muffin tin. These were very tasty.
