Dorie’s Cookies
Thank you to Steph who selected these cookies for this month. I think I have been the only one who voted for them. I have quite the stash of dates and was looking for a yummy way to use them up.
This is a plan ahead cookie as there are a couple of chilling times. I made the date-nut filling and cookie dough one day and then filled, rolled, chilled and baked the following day. Planning ahead made for easy slice and bake. We loved these cookies, very tasty and a nice mixture of sweetness and crunch. These were crispy out of the oven but quickly became soft from the moisture of the dates but still tasty.

oh, btw…i also have a ton of dates (a friend and i recently split a case, so i have pounds!) are you planning to do more baking with them? i’m looking for suggestions. 🙂
