French Fridays with Dorie Cheese Topped Onion Soup

Continuing on my journey with Around My French Table by Dorie Greenspan I have decided to dive into soups. I have never made onion soup before but I like caramelized onions and we had Gruyere cheese on hand so it became the pick of the week.
Two large onions cut up. I did not see how this was going to cook down.
But it did! Lovely caramelized onions about an hour later.

My understanding of French Onion Soup is that it is usually made with beef stock.  This soup version is made with dry white wine and chicken broth.  We really enjoyed this and plan to make it again for guests.
