Jam Filled Sandwich Cookies

This week on Tuesdays with Dorie our baking assignment was Jam Filled Sandwich Cookies on pages 275-276.

After reviewing the directions, these cookies were reminiscent of the hamentashen I make every year. Given the amount of work that goes into these cookies I was disappointed that the recipe only made 12 but lucky me using every scrap of dough that I could I made  20! I used what jam I had on hand; strawberry, orange marmalade and raspberry. It is a surprise every time you pick one on what filling you will get. My jam-loving husband liked these and my son couldn’t say anything negative about them which is all can hope for these days. I did like them and thought the ones with the cracks in them were the most interesting. I would make them again.

    Diane, these were good with any type of jam for filling. We loved them and I willbeing making them again.

    I made mine a bit bigger and still managed ten by using up all the dough. Love the idea of surprise filling. 🙂

    I really can't wait to make these. It's cool here so I don't have a heat battle – understand that the dough softens up quickly. I hope that I can get these made this coming week. I also think the ones with the crack are most interesting.

  7. Way less fussy than Hamentashen, I think (I can never fold those triangles correctly and always end up with a funky blob thingy). That being said – these were tasty and I was sad when they were gone.

    They were great cookies – disappointing that your son didn't have much to say about them. I did more than one flavour too, and loved guessing which was which.
