Green-As-Spring Veal Stew

It was green alright.  I had thoughts of Green Eggs and Ham.  Discussions of Dr. Seuss did not convince my son to eat it so he had buttered pasta and one piece of meat to try.  My husband’s thoughts were “we can’t serve this to company, it’s green”.

But of course it was delicious.  I had to substitute veal for other beef as I could not get it. I would take the advice of others next time and thicken the sauce a bit, it seemed to have run through the noodles. We are not big beef eaters so I am not sure if I would make this again.  I am glad I tried the recipe and am grateful for learning some new techniques.

    That looks delish, with noodles! And I used a bit of tapioca flour to thicken the sauce!

    Dr Seus has crossed my mind more than once looking at this stew. I liked the sauce.. not a big beef or veal person myself.

    Super green! Wondering if we could get anyone to eat it too…but hubs wants me to make the sauce as a side for his roasted lamb, so we will find out!

    I'm just making this now, so we will see how it goes. I had a veal chop in the freezer from when we were making \”the\” veal chop that I didn't get to. I have to say, it does smell delicious. Just about a quarter-recipe, so that should be about right! Yours does look beautiful!

    Actually, this would be delicious on pasta, I think. If I make the sauce again, that's what I will do. My sauce was thick so it would work nicely with pasta, I think.

    This stew was definitely green…mine a shade of day-glo…but we enjoyed it! I switched out the spinach for peas and the sauce had a milder taste. Yours looks the most like mine…I served it with boiled potatoes, but the egg noodles look yummy!
