Greek-Style Stuffed Peppers

This week’s theme on IHCC is ancient grains with our featured chef Ellie Krieger. The recipe I chose to make included bulghur which I think I confused with barley. Bulgur is a cereal food made from the groats of several different wheat species, most often from durum wheat. Bulgur is a kind of dried cracked wheat. It is most common in European, Middle Eastern, and Indian cuisine.


The recipe for Greek-Style Stuffed Peppers is available on the Food Network website. I made a few ingredient changes. The recipe calls for ground beef but I used turkey and I forgot to buy a zucchini so I added extra spinach. Other than that I followed  the recipe as written. My husband and I enjoyed this dinner as it has been a long time since we had stuffed peppers. We enjoyed the flavors especially the feta cheese. Now my son is another story. He is a tween and his sole aim in life is criticize my cooking. He even took a picture to send to his friend as in “look what I have to eat”.  I keep telling myself this to shall pass:)

    You have me giggling about your son! I have a 14 year old daughter and she wouldn't even try the stuffed peppers I made for last week's post. They sure don't know what they're missing!I adore stuffed peppers and didn't see this version or I would have chose it over the one I made. I am a sucker for Greek flavors and I absolutely take any opportunity to eat feta cheese:) Looks delicious.

    Your son would come around once his palate gets more developed. I made stuffed pepper recently and enjoyed its sweet taste once roasted. I could finish a few of these. Looks fantastic.

    Haha your son!! He will look back 10 years later and regret that he didn't appreciate his mum's cooking which is really good! I never knew bulgur is a type of cracked wheat. Interesting!! I'm sure you are very happy your hubby enjoyed it as much as you do 🙂
