This week on French Fridays with Dorie we are making lamb and dried apricot tagine (pages 284-285). We love Moroccan food so we were looking forward to this dish.
Everyone loved this dish. It was soft and flavorful and couscous was the perfect side dish. I would make a few adjustments next time. I found the apricots too soft and flavorless. I think soaking them in the boiled chicken broth and also baking them took out all the flavor. I would skip the pre-soak next time. Also I thought 4 onions was a bit much, I would cut back by one or two next time. But other than that we loved the dish, in-laws too, and would serve it again.
These recipes are part of an international cooking group working our way through Around My French Table by Dorie Greenspan. To see what others did go here.
Pretty, pretty presentation, Diane! Glad you all enjoyed the dish!

So glad you enjoyed this, too, Diane! I loved it, but Bill grumbled a bit till I told him not to take any sauce. I could have predicted that!

Glad you enjoyed it too! I thought it was a lot of onions when I was chopping, but in the end, didn't mind them. Have a great weekend!

I didn't soak the apricots because the ones I bought were plump enough (besides, they should have plumped after 1+ hour in the oven). I also stopped at the third onion. We still had plenty of sauce leftover.

I always think a recipe goes better after it's been made once and personal adjustments have been done. I cut the onions by half – just thought that was way too much and I used big onions. I think I actually forgot to soak the apricots! Sp, there you go….. Glad you enjoyed it too. (And, I am sure your Mother-in-Law was impressed.

We liked the apricots ours had flavor. I wonder if it matters where they are from. Ours were from a green market and they did look different than the ones in the grocery store. I agree about the onions we cut back on them. Always need to tweak to your taste…

Glad this was a hit!I think these cooked long enough in the liquid that the presoak was not totally needed.

I also found the apricots a little \”flabby\” but next time I wouldn't soak them, that's all.

Great looking pair on that plate! Enjoyed this too when I 'accidently' made it 'early' some months ago!
